Regarding historical sapphic women and becoming nuns, I've listened to some podcast episodes on the subject, which means I can't go back readily and check exactly what was said. But it definitely seems to have been common enough for information to have survived on many occasions. I have an impression I've heard it explained that yeah, people into same-sex love might be motivated to go to convent, because giving up marriage to opposite sex isn't exactly a big sacrifice, and then they can spend time surrounded by their own sex, which they like anyway. And anyway people might end up in convents for all sorts of reasons other than the religious, such having behaved indiscreetly or otherwise not conforming enough, or just liking to study.

The History is Gay podcast (https://www.historyisgaypodcast.com) did an episode last year on same-sex relationships in convents and monasteries, and I'm pretty sure they addressed this topic more in general, and on their website they should have show notes with sources and such. Also, I'd heartily recommend Heather Rose Jones's Lesbian Historic Motif Project blog and podcast - I'm pretty sure she's covered this as well and has a ton of resources somewhere.
